DECEMBER

Well Folks it’s 28th December. Christmas is behind us and the new year celebrations are just around the corner. Its a great time of year to reflect on the previous year and to look forward to the new one. From the onset of December the emphasis shifted from farm work to the processing and delivering of the Christmas geese.
There are basically 5 stages in the processing of our geese in preparation for the Christmas sales:

  • Slaughter/Plucking  Rows of beatifully dressed geese ready for packing.
  • Hanging
  • Evisceration/Dressing
  • Packing
  • Distribution

We started slaughtering/plucking this year on the 9th of December we all worked very hard and this initial process was completed on the 12th December. Having completed this initial phase of the work the birds were left in the cold stores at around 2 degrees C  This period of storage is very important in that it enhances the flavour of the finished bird.  We then commenced the next stage of production which is the evisceration and cleaning of the carcases on the 15th December. By the 18th of December we had finished dressing the birds and they were ready for packing in boxes and delivering to our customers.
Orders came in swift and fast during late November and early December and by the time we had finished killing we had taken orders for all the 1000 birds that we annually rear. The birds done very well this year and there were no out grades at all. Everyone was very happy and so we enter the new year full of optimism and in the hope that 2014 will be just as kind to us. We had two inspections this year by the local Fenland District Council Environmental Health officer, who was so impressed with the standards of cleanliness throughout our operation that he awarded us the maximum Hygiene rating of 5. He was also commented on and was extremely impressed with the conditions in which we rear our birds.
As the new year approaches we have now started  processing our goose fat for the coming year. Throughout January and early February we will have our fully approved rendering facilities fully utilised and flat out. There will be more about this in January’s exciting episode…!!!
